Ulli Vada / Onion Vada

INGREDIENTS
- Gram flour കടലമാവ് - 2 Cups
- Rice flour അരിപ്പൊടി - 2 Table spoon
- Onion സവോള - 3 Nos
- Ginger ഇഞ്ചി - 2 Inch piece
- Green chilli പച്ചമുളക് - 3 Nos
- Curry leaves കറിവേപ്പില - 2 Sprigs
- Water വെള്ളം - 1 Cup
- Cooking oil എണ്ണ - to deep fry
- Salt ഉപ്പ് - 1 Tea spoon
INSTRUCTIONS
- Slice onions and chop ginger, green chilli and curry leaves.
- Take the sliced and chopped ingredients in a bowl and squeeze well using hands by adding 1 tea spoon of salt.
- To this, add gram flour, rice flour and 1 cup of water. Mix it well and make a thick batter.
- Pour enough oil into a deep bottom pan and heat it. When the oil is hot reduce the flame to medium and drop table spoons of the batter. Deep fry the vadas by turning both sides till golden brown.

Hi Malathi, Gram flour is also known as chickpea flour, besan or garbanzo flour. In malayalam it is called “Kadala Mavu” and in Hindi “channa ka aata”. It is the flour made from dried chickpeas/garbanzo beans. Gram flour is available in most of the grocery stores. I hope this information helps you and ulli vada / onion vada comes out well for you.

Hi.. I think maida+kadalamaavu is more better than rice+kadalamaavu for making ullivada… what do you think Shaan?
Hi Shefeeena, You are correct. Adding maida will taste better. But I won’t recommend it as it is unhealthy. I always try to avoid maida in my recipes until and unless it is necessary. Thanks for the suggestion and regular visit.

Thank you Shaan! I tried this and came out really awesome.. We had it with a cup of hot tea 🙂 I followed the same procedure; additionally added 1/4 teaspoon chilly powder, a pinch of cumin powder & a pinch of asafetida.

Hi Shaan, After a 4 months gap I’m back to cooking n had to make a snack with limited resources so opted ulli vada n not to loose any ingredients I quickly checked on net and thats how reached your home…. Vada came out well but I added a spoon full of dosa maav too so lil spongy it will be.

This recipe is nice but I used kashmiri chilly powder instead of green chilly. My kids like this vada.They are too small if they bite in the chilly piece but chilly powder is nice and gets a red colour to ulli vada.
