Kerala Chicken Biryani

Well, the term ‘chicken biryani’ itself makes one’s mouth to water! As soon as you hear the word, you are lost in the rich aroma and flavor of this wonderful all-time favorite dish. Biryani got its name from the Iranian word “birian”, meaning “fried before cooking”. So we can believe that it originated from Iran (Persia). There are different versions of chicken biryani: Hyderabadi, Awadhi, Sindhi, Chettinad, Malabar or Kerala Biriyani and so on. Traditionally, it was prepared with rice and leg pieces of goat. Now people are making this dish with chicken, beef, egg, fish, etc. Biryani has always been a rich festive food; it is made with rice, meat, eggs, vegetables, fish and spices and it has become a very common Indian household recipe. In those days, making chicken biryani was considered as a tough task and it was made only on special occasions, in fact, only once or twice in a year. However, with most ingredients available readily these days, making biriyani is no more a challenging task. Nowadays, it is cooked almost every week or at least once or twice in a month in most families. Here, you can enjoy a Kerala chicken biryani.

  • Pepper കുരുമുളക് - 10 Nos
  • Coriander leaves മല്ലി ഇല - 4 Sprigs
  • Mint / Pudina leaves പുതിന ഇല - 5 Leaves
  • Pineapple chopped - ½ Cup
  • Coconut Oil വെളിച്ചെണ്ണ - 3 Table Spoon
  • Salt ഉപ്പ് – to taste

INSTRUCTIONS

  • Wash biryani rice, soak in water for 30 minutes and drain it well.
  • Grind ginger, garlic and green chilli into a paste. Add curd and salt to this paste. Marinate chicken pieces with this paste for minimum 30 minutes.
  • Now prepare the garnishes for chicken biryani. Heat 1 table spoon of ghee in a cooking vessel, fry cashew nuts, raisins and 1 finely sliced onion separately till golden brown and keep aside. (while frying onions, when it is almost done add 1 tea spoon of sugar so that the fried onions remain crisp throughout)
  • Heat 3 table spoon coconut oil in a vessel, put remaining 3 finely sliced onions and salt to taste. Saute until golden brown. Reduce the flame, add chilli, coriander, turmeric and garam masala powders. Stir it for 2 minutes. Add sliced tomatoes and saute it for few minutes.
  • To this add marinated chicken pieces and stir occasionally for 5 minutes. Add 1 cup of water and cook it covered till done (reduce the flame to medium when it starts boiling).
  • Heat 1 table spoon of ghee in another cooking vessel, put cinnamon, cloves, cardamom & pepper and stir it. Put rice and stir for 2 minutes. Pour 7 cups of hot water and salt as needed. Cook it covered till the water is absorbed by the rice completely. (Reduce the flame when it starts boiling. Take care not to over cook the rice.)
  • Spread evenly 1 table spoon of ghee in a vessel and layer it with rice and cooked chicken. Arrange 5 layers with rice and chicken. The bottom layer and the top layer should be rice. Garnish each layer with fried onion, cashews, raisins, pineapple, finely chopped coriander and mint (pudina) leaves. Pour 1 table spoon of Ghee on the top of Chicken Biryani. Cover the vessel.
  • Heat a heavy tawa, put the biryani vessel on the tawa and heat it in a very low flame for 15 minutes. Turn off the flame and let it unopened for another 10 minutes. (Instead of cooking it on a heavy tawa, you can also cook it in a pre-heated oven.)
  • Serve chicken biryani hot with salad, pappad, lime pickle and lemon tea.

NOTES

  1. To avoid the raw odour of chicken, 1 table spoon of vinegar or lemon juice can be used, when cleaning the chicken.

Haiiiiiiiiiiii Brother,
It is very easy & excellent, thank u so much for this dish. All are happy for this simple way & this biriyani.

Where is the use of Saffron flowers here, does it enhance taste and if so how should it be done

Hi George, Usually Saffron is used for both colour and flavor. Soak it in half cup of hot milk for few minutes. Add the milk to the biryani at step 7. Hope this helps.

Can you please tell me what is the meaning of heavy tawa in malayalam.

Hi!! It seems easy and great taste recipe.. I will surely try to cook this tomorrow.. I’ve cooked some different kind of chicken biriyani still searching for the best one.. thanks!

Yoghurt evideya use cheyyunne?

Instead of these powders (coriander, chilly etc.), can we use biriyani masala or not?

Hi Leena, Thanks for the comment. Of course you can use biryani masala. When you are using it, avoid garam masala and reduce the quantity of coriander and chilli powders.

Haaaaaaai Shaan, thanx for this recipe. aadyamayittanu veetil biriyani undakkunnathu pakshe ethrayum nannakumennu njan polum vicharicilla. oru samshayam? rice kuzhanju pokunnathu enthukondanu? cookin time?

You are welcome Sili. Nice to know that the chicken biryani came out well for you and all of you enjoyed it. Don’t stir the rice too much once it is cooked well. Also take care to remove it from the heat when it is 90% cooked so that the rice does not stick together.

Dear Shaan, I tried it, but it is found little difficulty to cook rice. After frying cooking is little difficuty because when water become removing from rice it become sticky. What kind of precaution will be taken for this problem. I am one of your freequent visitor. Thank you.

Dear Suresh, You need not have to remove the water from the rice. It will be absorbed by the rice. If it found sticky, try by reducing the quantity of water. Thank you for the regular visit.

Hi Geo, 1 doubt, r u adding 7 cups of water for 4 cups of rice. athu vattikkuvanno or drain cheythu kalago????

Hai bro…, How do we know that rice had cooked upto 90%..???

Neethu, The rice should not stick together but it should be cooked enough to eat it – that is the condition. After all it is all about the experience 🙂

Hi Shaan, Thanks for the recipe. Hope to surprise wife n kids tomorrow. Any particular type of rice is best suited? Long or short?

Hi Shan, Thanks a lot… I tried this and come out very nicely. A very big thanks…

Its nice, planning to prepare soon. I have a doubt, after step 5 can we remove the chicken, once we feel its cooked. Step 8, big tawa and stuffed layer or chicken with rice, can you explain how it is?

Riscob, Thanks for the comment. You need to remove the chicken from the heat once it is cooked well. In step 8, heavy tawa means a pan with high thickness in the bottom. (Instead of heavy tawa you can use preheated ovan.) Making layer of chicken and rice means, first you need to put ⅓ of rice in the bottom of the vessel then on top of that place half of the chicken. Repeat it with the remaining rice and chicken to form 5 layers. (From the bottom of the pan it should be something like: ⅓ rice >> ½ chicken >> ⅓ rice >> ½ chicken >> ⅓ rice)

I am gonna try it out tomorrow. Wish me good luck please 🙂

Good job Shaan. Nice recipe. Which raisins you are using? I am not getting same colour as in the pic above.

Liby, I used the golden colour raisins which we usually get in Kerala. I haven’t used any colours for the biryani. Colour may vary depends on the chilli powder we use. I used Kashmiri chilli powder. Thanks for the feedback.

So plzzz tell me… so that I can become really a good chef ? in my home. bye take care.

Anupama, I think the real secret behind the aroma of sambar is the Asafoetida powder (കായം). Also Tamarind (പുളി) and Shallots enhances the taste. Try this recipe and let me know whether it meets your expectations 🙂
